Simply buy rail tickets on the day you plan to travel from Paddington station; there is no advantage when buying the tickets in advance.

If your Oyster card carries a Travelcard, then at Waterloo you ask for a ticket (a return, presumably) from the boundary of zone 2 (or whatever is outermost zone covered by the Travelcard) to Windsor. Then you use your Oyster card to get through the ticket barrier at Waterloo, get on your train and get off at Windsor, where use your ra\railway ticket to leave the station.
